COTEAUX DU SAILLANT-VÉZÈRE

Located in Corrèze next to Brive, my wineyard is not well known ...yet but I really deserve to be recognised and appreciated !!

MY HISTORY... IN FEW WORDS.

My wineyard has a long history but I am going to be quick. Before having been left alone because of the philoxera disease in 1875. 

I was already recognised thanks to the quality of my terroir. In 1990, fifteen friends decided to give a new life to my wineyard. In 2003, the first wines has been planted. 

Nowadays, the domain counts 18 hectares with,several grape varieties
Principally, chenin, sauvignon gris and chardonnay for the whites and merlot and cabernet franc for the reds.

I am the last wine born from the domain, but not the least !!

Composed only from chenin, I am very tonic, fruity and mineral wine which remind my terroir and my history worldwide known for its mineral soil. 

You will be asking me with which meals I can be associated with?

Keep calm. My special advice are coming...

I am really good with salads or with fish which goes well with my fruitness and my mineral taste but think to me when you are looking for a good wine to join any occasion. 

In other words, I am ... how to say... not difficult to associate with.

If you let me add something... Good wines are not only those with a high price. I hope, thanks to this special edition of my wine man show to have awaken in you the desire to taste me very soon.

LADIES & GENTLEMEN, 

IT'S MY PLEASURE TO HAVE YOU ON THIS SHOW AGAIN AND ESPECIALLY AT XMAS TIME, WELCOME BACK !!! 


I am a CÔTE DU ROUSSILLON VILLAGE 2008 FROM CHÂTEAU PLANÈZES.

Guess what? I am a blend of 3 traditional grapes from Southern France: Syrah, Grenache Noir & Carignan.
I was aged in oak barrels during a year, that's why I am a little bit oaked.
I am well structured, good to drink now with further aging potential.
Highly proof (14,5°) because of my sunny terroir, I am great with strong tasting meat.

WHAT XMAS TIME IS ACCORDING TO YOU ? TO ME IT'S A GASTRONOMIC MARATHON !  

So let me give you a nice recipe to be serve with me!
I chose a Wild Boar dish! As I said earlier I need to be served with strong meat.

LOIN OF WILD BOAR, BUTTERNUT SQUASH PUREE, POTATO MILLEFEUILLE, BLACK MUSTARD SEED JUS

SERVES 4
Preparation time: 1 hour
Cooking time: 1,5 hours

INGREDIENTS
1 large butternut squash
250 g butter
0,1 ltr cream
1 kg Maris Piper potato
1 loin of Wild Boar (1,2 kg)
10 g black mustard seed
0,2 ltr veal jus
4 banana shallots
400 g baby navet
0,2 ltr cider
1 Braeburn apple
salt & peper

METHOD
Preheat the oven at 180°C for the potato, the squash and the boar.
Peal and finely slice the potatoes and melt the butter in a pan. Coat the potatoes in the warm butter, then layer them into the mould, seasoning each layer. Bake for 30 minutes and allow to cool.
Peal and dice the butternut squash, wrap in kitchen foil and bake for 20 minutes.
Remove from the foil and purée in a blender with the cream, 20 g of butter and seasoning.
Trim the loin of boar, reserving the trimmings for the sauce, portion off 4 cutlets and leave the rest whole.
For the sauce, roast the trimmings and apple together, deglaze with the cider, reduce by half, pass through a fine chinoise then add the veal jus and reduce to a sauce consistency.
Peal and blanch the baby navets, peal and slice the shallots into 1,5 cm rings.
Roast the loin of wild boar for 8 to 10 minutes then allow the rest for at least 10 minutes, meanwhile, pan fry the cutlets and shallots together.
Cut the potato in 4 slices, brush with butter and place in the oven. Reheat the purée, finish the sauce with the black mustard seed, glaze the navet in butter. Slice the loin and dress you plate nicely.

READY TO SERVE!

The recipe is absolutely GORGEOUS, and we are great together!

LADIES AND GENTLEMEN,

A WARM THANKS TO ALL OF YOU WHO FOLLOW US WEEKS AFTER WEEKS..

"I am a Juliénas 2011, from Cave de Saint Julien located in Rhone valley. 
I am quite powerful and structured like I love to be. All other wines are jealous because my friends have the habit to call me... the "strong" of the Beaujolais wines.

I am, for this cuvée, "the" high quality wine..thanks to my structure. 

DO YOU WANT MORE DETAILS ABOUT ME ??

I am kept for 8 months before being bottled after easter. You can drink me now or keep me for a few more years and I promise you that I will be even better than today.

I have been discover thanks to the professional advice of "Le Chai Bordin", wine bar and cellar in Périgueux, without any wishes of showing off, 
I am great with red meats or with strong cheese.

TASTING NOTE

Eye- garnet wine with violet hues
Nose - Nose combining powerful aromas of black fruits, spices and peony
Taste - Rich, balanced and round the mouth reveals a beautiful structure supported by the vinous.
All still a little young, deserves to wait at least a year before to appreciate me.


As it is a cooperative wine, you will do not find it easily on the Internet.

I know that my style is different than other Bordeaux wines, but don't you like my beautiful black suit? Anyway, if not, "do not judge a book by its cover"

I'm a 9 year old Bordeaux Wine, so it's time to drink me!

Have you ever heard my name? Obviously, I'm a rare gem you know! In fact, I come from an independent little winery of 10ha with a very low yield. And low yield often means great quality!

If you have the chance to taste me, you will enjoy the complexity and diversity of my blend (40% Merlot, 35% Cabernet Sauvignon, 18% Cabernet Franc, 7% Petit Verdot)

Looking for something original? You're in th right place! I come from Barsac winyards... Yes the sweet white wines, but me I'm red! This is why my taste is very different than the Bordeaux wines you use to drink.



My perfume is so sweet... Every woman is going to like me...

My taste is very fruity, such as cherry, raspberries...

I advise you to pair me with desserts such as cheese, pastries...
But also very nice to drink with fish!

If you want to impress your friends or family with a very original and tasty Wine, don't wait anymore...

As I said on our last article, this week's concept will be wines under 5€.
Let's the Wine Man Show begin !

"Hi everybody, My name is Bordeaux Supérieur 2010! I am pleased to introduced  myself to all of you, wine lovers that you are !

 was born in 2010, so I'm pretty young at the moment. As I am a bit more mature than the 2 year-old girls, I am looking for older womans (20 - 35 years old). I have a strong body and make everyone happy at any moment of the day! Anyone interested ?

You can get me for only 4,36€ at Carrefour Market. I am standing here waiting for you to take me!

I am made from Merlot / Cabernet Franc / Cabernet Sauvignon. The 3 major wine varieties in Bordeaux.

I come  from "La cave d'Augustin Florent" which is a selection of wine made by Augustin Florent, for Carrefour. His selection offers wines from different regions of France (Languedoc-Roussillon, Rhone valley, Loire Valley, Bordeaux..), at affordable prices.





Appearance : Clear / Medium viscosity / Garnet

Nose : Very fruity aromas, with blackberry, wild berries, red fruits. Animal aromas on the second nose with a hint of coffee and cumin (spicy aromas)

Palate :  The first thing you feel is alcohol, very bitter, it doesn't last long in mouth. Once you've let the wine opening, you feel more the taste of wild berries

Conclusion :
This wine has to be served on a dish, a piece of meat that will soften the taste. It isn't transcendent, but is ok for a meal between friends, tapas ...


 

Did you know this ?


AOC Bordeaux Supérieur is a regional AOC, same as AOC Bordeaux. Wines of this appellation can come from anywhere in the Bordeaux wine-producin region.
A wine can be granted this appellation name, if it respects qualitative criterias that are even more rigorous than for AOC Bordeaux appellation. These wines have to be produced from old vines and have to be aged at least 9 month before being on the market.

It is a pleasure for us to have you for our first show !
This is a beginning and we expect you to make this place an interactive blog where anyone can share their opinions, new ideas, or ask any questions they might have. We are here for you, remember it !



WHAT IS WINE MAN SHOW ?

Does it ring a bell to you ? Well... Wine Man Show comes from... You guessed it... One Man Show!
The team that you'll meet later on makes a "One" as we all share the same passion : Wine.
We  are here to entertain you, to make you react and participate. Here the actors, are US, the editors, but also YOU ! And the bottle of wine !
Each article will be a unique moment,  as the protagonist (the bottle), will always change. Its character, its background, its colour, everything will make the experience extraordinary.



WHAT DOES IT CONSIST OF ?

Our main goal is to make wine accessible to everyone. Accessible for its price, as well as for the understanding of wine. We are here today to help you in your choice of wine for any occasions. What we'll do, is that we will start for our first article with a Wine under 5€ in a supermarket such as Carrefour market which you can find anywhere in France and in other countries, We will send you anywhere where you can find the wine we tasted together (Websites, supermarkets, Wine Shops, etc...)

Every wine that we will taste will be presented, therefore you can expect us to find some wines that we liked but also disliked.

Our challenge is to find the best wines for different budget and theme,  but we also expect you to share your experiences of tasting quality & affordable wines ! Please feel free to ask us for a suggestion for a specific theme in a specific budget!

The more we will get references on this blog the easier it will be for you to say "Hey, that one looks nice, and I know exactly where to get it, EASY!"

Thibault, has always been curious and interested in learning new things, the spirits and wines industry have always interested him. He is also 100% involved in the 4L trophy! Watch out drink driving! 


Camille, who grew up in a family winery producing Armagnac, is a big fan of french wines. Would love to discover more about foreign wines! As Pline l'Ancien said: "In vino veritas" !

Thomas, is involved in the Cognac and Champagne industry working in his familly company. Always ready for new wine discovery! "To drink is not the answer, however, drinking makes one forget the question"

Lucie, passionate about Australian wines, has been travelling around Australia to discover its secrets. She says she speaks fluent chinese but that´s what she thinks...

Paul, a huge fan and connoisseur of Cognac, very talented at computer design, is happy to share  his passion with you!
